Three Berry Cobbler Recipe

Servings: 12 | Prep: 10 min. | Cook: 50 min. | Total: 60 min.

Ingredients:

         Berry Mixture

  • 6 cups mixed berries, blueberries, blackberries, strawberries
  • ¼ cup sugar
  • 2 Tbsp. cornstarch
  • 1 tsp. lemon juice
  • 1 tsp. vanilla extract 

                     Biscuit Topping:

  • 2 cups flour
  • ½ cup sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 6 Tbsp. butter, cold and cubed
  • ¾ cup buttermilk divided

Directions:

  1. Preheat oven to 350°. Grease an 8×8 baking pan. 
  2. Mix berries, sugar, cornstarch, lemon juice, and vanilla in a medium mixing bowl.
  3. Spread berries evenly into the baking pan.
  4. Whisk, in a separate bowl, the flour, sugar, baking powder, and salt. Use a pastry cutter to cut the butter into the flour mixture until coarse.
  5. Slowly stir in 5 oz. buttermilk. 
  6. Take large scoops of biscuit dough and flatten each scoop a bit. Place dough on top of the berries, mostly covering them. 
  7. Brush with the remaining tablespoon of buttermilk. 
  8. Bake for 50 minutes until the top is golden. Cool on a wire rack for 5 minutes before serving. 
  9. Serve warm with vanilla ice cream.
