Stuffed Baked Pumpkin Recipe
Stuffed Baked Pumpkin Recipe time! This is a yummy wonderful recipe that may sound weird, but you just have to give it a try.
Ingredients:
- 1 medium sized pumpkin–make sure it will fit in your oven
- A pound of your favorite meat–ground beef, stew meat, or wild game is perfect(you can omit the meat if you are vegetarian)
- 1 onion chopped
- A bell pepper chopped
- 2 to 4 cloves chopped of garlic
- 1 cup chopped mushrooms
- One cup fresh spinach or 1 cup chopped fresh kale
- 1 can cream of mushroom soup
- 3 cups cooked rice
- 3 to 4 cups chicken stock(vegetable stock works for vegetarians or vegans)
- 2 to 4 chopped boiled eggs( you can omit if you are vegan)
- Salt and pepper to taste
Instructions:
- Preheat oven to 425.
- Cut top off of pumpkin and remove all seeds. (This is a great job for the kids! Save seeds for roasting or planting. I saved the pumpkin insides for the dogs. Dogs LOVE pumpkin. You can feed it fresh or use it to make dog treats.
- In a large saucepot, brown meat. Stir in onion, pepper, and garlic until softened.
- Add mushrooms, spinach or kale and mushroom soup. Stir until well incorporated. Add cream of mushroom soup and stir until well mixed in. Add eggs.
- Remove from heat, stir in rice and stock. You want this stuffing to be moist, but NOT having visible liquid in it. Season with salt and pepper.
- Spoon mixture into pumpkin and cover with top and put in the oven.
- When done, remove from oven and let sit for 15 minutes.
- Slice pumpkin and serve with stuffing.
