Shrimp and Grits Recipe
This is Jay’s GO TO MEAL! His shrimp and grits recipe rivals ANY restaurant’s recipe! Deceptively easy, and OH SO GOOD! We actually used prawns for this go-round, which are locally grown by one of our customers. Here’s Jay’s recipe for Shrimp and Grits:
4 cups water
salt and pepper to taste
1 cup grits
4 tablespoons butter **Do yourself a favor and get Kerry Gold butter**
2 cups of your favorite cheese- cheddar, sharp cheddar, gouda all work very well here
1 pound shrimp, peeled and deveined
6 slices bacon, or 3 tablespoons olive oil
4 teaspoons lemon juice
2 tablespoons parsley
1/2 cup chopped green onions
1 or 2 cloves chopped garlic
Directions: Bring water to a boil, add grits
, salt, and pepper. Cook until water is absorbed, remove from heat, add in the butter and cheese. Rinse shrimp and dry with a paper towel. Cook bacon in a frying pan until crisp, remove bacon, chop into pieces, and set aside to drain on a paper towel.
If you are not using bacon, heat oil in a pan, otherwise use your bacon grease. Sautee shrimp in oil until pink, add lemon juice, parsley, half of the green onions, and garlic, add the bacon back if using. Saute for 2 to 3 minutes. Spoon grits into bowl and top with shrimp mixture. Garnish with remaining chopped green onions. You can also garnish with shrimp heads that have been boiled if you buy whole shrimp. This really adds a NICE touch!
