National Fried Chicken Day

Today is National Fried Chicken Day!  Yep, that’s right!  Does anyone besides me remember watching their grandma fry chicken in CRISCO in a cast iron skillet in the kitchen, and remember how WONDERFUL that chicken was?  The smell of that chicken frying up in the grease was sooo good.

I have tried to replicate that fried chicken, and failed MISERABLY on MANY occasions!  Apparently, the secret is to only turn it ONE TIME!   But, the timing of that turn is the critical part, and it has always eluded me!

My chicken has always ended up burned, or raw, or, more often than not, BOTH!  I remember watching Jacque Mama, my dad’s mom, cook chicken, and Jay remembers Grandma Jurica cooking hers, and they both used a fork to turn it. They would both prick the chicken pieces a few times to check for blood, and somehow knew EXACTLY when to turn each piece, only using the fork to do so! It turned out just right, every single time.

I guess, if we want fried chicken at our house, we will go down the street to Popeye’s! Arcola Feed wishes you all a happy National Fried Chicken Day!
