National Caesar Salad Day
Happy Independence Day! But that is not all….today is also National Caesar Salad Day! I LOVE a good Caesar Salad! The best thing about Caesar Salad? Well, the cheese, AND the dressing OF COURSE!
It’s easier than you might think! YES, it has anchovies, but that is where the flavor comes from! If the thought of those little fishies in a jar scares you, then you can substitute anchovy paste. You can find it by the sardines in the grocery store. Let’s make some! Recipe Time.
You will need:
- 2 small garlic cloves, minced
- 1 teaspoon anchovy paste (or use three or 4 anchovies with some of the oil, simply mash with a fork until it turns into a pasty looking substance.)
- A teaspoon dijon mustard
- 1 teaspoon Worchestershire sauce
- 1 cup mayonnaise (use homemade or a GOOD brand like Duke’s or Blue Plate.)
- 1/2 cup FRESHLY grated Parmigiano-Reggiano cheese **** PLEASE don’t use the stuff in a jar or canister*****
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
