Jelly Filled Oatmeal Cookies

Jelly Filled Oatmeal CookiesRecipe time for for jelly filled oatmeal cookies! With all of the jelly and jam I made earlier this year, I thought I would find a recipe to use some of it. So, I found this really cool recipe for jelly filled oatmeal cookies.  It was pretty easy and really good!

Start out with an assortment of your favorite jams…..the thicker the better for this recipe.  Orange marmalade was THE BOMB!

Ingredients:

1 1/2 cups old fashioned oats

2 cups flour

1/2 teaspoon baking powder

1/4 cup brown sugar

1/2 cup granulated sugar

1/2 teaspoon salt

1  teaspoon vanilla extract

18 tablespoons butter, melted and cooled

non stick spray

Directions:

Preheat oven to 350.

In food processor, pulse flour, sugars, oats, baking powder and salt until blended.  Add butter and vanilla.  Pulse until a crumbly dough forms, scraping down sides occasionally.   It might seem dry, that is okay.   Leave the crumbs for dressing the top, later.

Spray muffin pan with non stick spray.

Scoop out a tablespoon of dough and place it in sprayed well, mashing to coat bottom and sides of well.  Use crumbs to to sprinkle along top of each well for streusel.   Drop one teaspoon of jam in center of each well.  Bake 15 to 18 minutes, turning pan halfway through.  You want the cookies to be lightly browned and the jam to be bubbly.  Don’t over cook!   Remove from oven.  Let cool a few minutes, then remove cookies from pan, and completely cool on wire rack.  I used jalapeno fig, strawberry fig and orange marmalade for mine, and they were all REALLY GOOD and all different!
