Instant Pot Mediterranean Chicken
It’s National Poultry Day. Yes, there is even a National Day for poultry! Turn that frown upside down! No foul moods allowed! Don’t ruffle any feathers! Get your gobble on and quack somebody up with a great chicken joke or two! Here is an awesome recipe to celebrate the day!
Instant Pot Mediterranean Chicken
Ingredients
3 chicken leg quarters (since you are using your Instant Pot, you don’t even have to thaw them out ahead of time)
3 1/2 cups chicken stock or broth
1 cup rice
3 tablespoons olive oil
1 medium russet potato chopped into bite sized pieces
1 onion coarsely chopped
3 tablespoons Uncle Steve’s Shake (I used original for this one)
3 lemons, sliced into 1/4 inch slices
3 teaspoons chopped garlic
2/3 cups olives (I used manzanilla)
2 tablespoons capers
2 bay leaves
Directions:
Oil the instant pot, then add rice, chicken and the rest of the ingredients, add stock and set it to chicken and let it cook! I use the natural steam release. Serve with greek salad, or any salad and enjoy your easy peasy Instant Pot Mediterranean Chicken.
