Homemade Tomato Soup Recipe
Homemade Tomato Soup Recipe: It’s National Soup Day! Here is a wonderful recipe that is absolutely delicious!
Ingredients:
- 3 lbs Roma tomatoes

1 yellow onion chopped
-
1/4 cup fresh basil chiffonade
-
2 tablespoons unsalted butter
-
1 cup heavy cream
-
salt and pepper to taste
Directions:
- Core tomatoes and quarter.
- Chop onion.
- Melt butter, add the onions and stir well.
- Add tomatoes and bring to a boil.
- Reduce heat to simmer until tomatoes and onions are fully cooked.
- Let cool.
- Puree in a blender or with a hand blender.
- Bring back to a simmer.
- Put in salt and pepper to taste.
- Add 2 tablespoons sugar to balance the sweetness, if desired.
- Add cream, stir and top with basil before serving.
This is awesome with a grilled cheese sandwich as pictured above. (I love a good grilled cheese! Smoked gouda makes a FABULOUS grilled cheese sandwich.
