Homemade Noodles: Recipe time!
Have you ever looked at a package of noodles and noticed the ingredient list? There are usually 6 to 8 ingredients listed. My noodle recipe has 4 ingredients! YEP, that’s it. ZERO preservatives, handmade and they are good!
Ingredients:
- 2 cups of all purpose flour
- 3 large eggs, beaten (room temperature )
- 1 teaspoon salt
- small amount of water to help moisten dough
Directions:
- Start on a clean dry surface.
- Make a mount out of your flour, then make a well in the middle.
- Add your salt.
- Pour your eggs in the middle of the well.
- Mix by hand until well blended.
- You may need to add a tiny bit of water if it is too dry, being careful not to add too much!
- Knead dough by hand for 5 to 10 minutes until it forms a nice ball, a little bigger than a softball.
- Use a knife to cut in half, then cut one of those in half.
- Use a rolling pin or pasta machine to roll out flat. If using a pasta machine, I make two passes on the #1 setting, then fold over and run a pass through each of #2, #3 and #4. You will have to fold it over several times to keep the length manageable. If you have a pasta machine, run the dough through the cutter side. If you don’t have a pasta machine, simply cut with a knife into strips the width you would like. (I prefer egg noodle width as that is the size I use for stroganoff and soups.)
- Next you will need to hang the pasta to dry. I have a pasta rack, or you can hang from dowel rods or even cardboard covered coat hangers. Grandma Jurica used to hang her pasta noodles outside on the clothesline!
- After they dry, package into zip lock bags and use fresh or within 3 or 4 days, or they freeze really well for several months.
