Gyro Recipe Time!
I recently made a FABULOUS and wonderful dinner that was also super easy: Greek meatball gyros with home made tzatziki sauce!
I used elk meat, but you can use lamb, pork, turkey, chicken, or just about any other meat!
First I made the sauce:
- 1/2 cup finely grated cucumber
- 1 cup greek yogurt unflavored
- 1 tablespoon lemon juice
- 1/2 teaspoon extra virgin olive oil
- 1 clove grated garlic
- 1/4 teaspoon sea salt
- 1 tablespoon chopped dill
- 1 tablespoon mint (optional)
Grate the cucumber, squish it between paper towels to wring out as much juice as possible, then mix with the remaining ingredients:
- mix one pound meat
- 1/4 cup panko bread crumbs
- 1 tablespoon chopped garlic
- 1//2 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 teaspoon ground oregano
- form into meatballs and set aside in fridge while you prepare the pan
Remaining Directions:
- Put enough olive oil in a frying pan to cover the bottom and have about 1/4 inch.
- Fry the meatballs, making sure they are brown, carefully turning until they are done.
- Slice pita bread in half, smear tzatziki on the inside, place 3 meatballs and add red onions and tomatoes to taste.
