Easy Strawberry Fig Preserves

My fig tree is full of quickly ripening figs! I am NOT a fan of figs, AT ALL, but I have a recipe for strawberry fig preserves that is SUPER EASY AND OH SO GOOD! It gives me something to do with those figs besides giving them to the neighbors. Best of all, it only has 4 ingredients!

Ingredients:
4 pounds or 6 to 7 cups(overripe preferred)
5 to 6 cups of sugar
2 large or 4 small strawberry jello packages
1 box surjel

Directions:
Mash or chop figs. Mix jello, figs and surejel.

Bring to a boil, stirring constantly, cook until there are no more large pieces, add sugar return to boil, stirring constantly for 1 minute.

Pour into jars, lightly seal. Place in a water bath for 15 minutes. Remove from water bath, let sit. I flip mine over onto the lid after about 20 minutes on the counter, then after an 1 flip them back upright, and tighten seal completely.

If you do not want to can, mixture can also be placed in freezer bags, or sealed plastic containers and placed in freezer until ready to use.

*Side note, if you top a Ritz cracker with blue cheese and scoop a little of this on top it tastes JUST LIKE A STRAWBERRY CHEESECAKE!
