Chicken Enchiladas Recipe
Chicken Enchiladas Recipe time: For this month I have an awesome and super easy recipe. It was a breeze to cook and tasted absolutely DELICIOUS! I chose to serve this meal with a side of Mexican rice and black beans, but feel free to make this recipe your own.
Ingredients:
- 2 Cans of Chicken Meat or Equivalent in fresh cooked chicken(shredded)
- (1) 8 oz package of Cream Cheese
- 1 can of Rotel
- Tortillas
- 1.5 Cups of Monterey Jack Cheese
- 1 cup of Heavy Cream
- Jalapenos, Cilantros, Onions – OPTIONAL TOPPINGS
Instructions:
- Preheat oven to 325 degrees
- Warm cream cheese and Rotel until cheese is melted
- Add chicken, stir, mix in 1/2 cup of Monterey jack
- Season mixture to taste with choice of seasonings
- Take mixture and fill in tortillas
- Oil a baking dish and place tortillas seam side down.
- Drizzle 1 cup heavy cream on top of tortillas
- Sprinkle one cup of Monterey jack on top.
- Bake at 325 degrees covered with aluminum foil for 30 minutes
- Remove foil, then cook for ten more minutes.
- Optional – Top with jalapenos, cilantro, onions whatever you want.
- Serve and enjoy!
