Chicken Enchilada Skillet Recipe
Chicken Enchilada Skillet Recipe Time! This is a delicious and super easy recipe. I made it last night and didn’t realize how quickly I was able to make a delicious meal. You can also use pork or beef for the main protein of this dish.
Ingredients:
- 4 tablespoons butter
- 1 small yellow onion, diced
- 2 tablespoons garlic
- 1 green bell pepper
- 2 tablespoons flour
- 5 mushrooms, sliced and halved(Optional)
- 2 chicken breast(boneless and skinless)
- 1 Tbsp taco seasoning, homemade or store bought (can use your own mix)
- ½ Jar of Salsa Verde
- 2 cups of Chicken Broth
- 8 (6-inch) flour tortillas, cut into 1×1 squares
- 2 cups shredded Mexican blend cheese
- 1 cup Sour cream
- Cilantro leaves, optional
Instructions:
- Heat pan to medium heat and melt butter in pan
- Add onion, bell pepper, mushroom and garlic to pan – cook until browned
- Next, Add flour and mix well to avoid burning
- Add broth, seasoning and salsa and stir
- Add in chicken, reduce heat to simmer and cover
- Cook until chicken is cooked through
- Shred chicken in pan
- Add remaining ingredients and simmer for an additional minutes
